Green tea is quickly steamed or pan-fired after harvesting to prevent oxidation. This preserves the tea’s green colour and fresh, grassy, or vegetal flavour. It can range from sweet and delicate to astringent and bold, depending on processing. Well-known varieties include Bi Luo Chun, Dragon Well (Longjing), and Mao Jian.
